Why is it every time I will send a message it keeps saying that there is not enough memory and an option to delete wherein there is nothing to delete? I just used this phone last Monday and bought a 1 gig memory card last Wednesday and then the messaging thing happened.

Try to reset the phone to default settings,*#7780# code 12345

Check the firmware version on the phone,if very old update the software. *#0000# latest one 7.01

I advise you to check the phone memory - Menu> Gallery> Then you would see there several folders containing Images, Videos, Tones, and received files. If there are files inside, you may move them to the memory card.
