I can't figure out how to assign different tones to different people's numbers like I have with my past 3 phones.

I have always had a separate tone for my sister's number so that I know it's her straight away.

Does anyone know how to do this on the 6101?

unfortunately, this is not possible with the 6101.
As a workaround, you could assign the ringtone to a group which has only one contact.

Assigning an individual ringtone to each contact is possible with latest phones like 6280, 7370, ...

Vodafone enticed me to stay when I was thinking of leaving them (I was 6 months out of contract) by offering me the 6101, saying it was the latest flip phone that nokia had. I only wanted Nokia.

From what you say- they were making that up! I don't know much about what's new in phones so I just believed them. Now thinking of sending it back and asking for something better. I have 14 days to do that and I've only had it for 2 days so far.

the 6101 is still an excellent phone. Keep it!
6280 and 7370 are not flip phones (but slider/swivel).

You could use following workaround:
In phonebook, create a group with only one member (your sister). Assign your sister's ringtone to this group.
