every time i turn my phone off and turn it on again i have to put the date and time in again? any ideas on why this is happening and how can i fix it?

It's a hardware fault. The auxiliary battery/capacitor that powers the clock when the phone is switched off is dead.

This is a job for a Nokia Care Point. You can't do it yourself.
