I've found settings to change autolocking settings and to disable locking when the keypad is slid closed, but is there an option anywhere to stop the keypad automatically unlocking when it is open? I'd like to manually manage all locking and unlocking...

Go to Tools -> Settings -> General -> Security -> Phone and SIM card. In that settings, click on Keypad autolock period and set it None and exit from settings. Now your keypad will not lock.

So as I mentioned, I've already managed to stop it locking automatically. I want to stop it unlocking automatically.

OK. This cant be done. This issue reminds me that you use a magnetic pouch or your phone comes in contact with any magnets. So check whether this happens? Also theres no option to stop unlocking keypads automatically.

I believe that advanced device locks (standard or pro) may keep the phone locked, until you choose to unlock it.
