You won't lose Snakes or Card Deck as these are stored in the phone's ROM. You will lose high scores unless you copy the relevant file, e.g. for Snakes, if you copy the files C:\System\Apps\6R45\sno.bin and C:\System\Apps\6R45\sts.bin then you will save your high score data.

The phone's OS will not be deleted during a format. The phone's OS is stored in ROM (Read Only Memory) and therefore can never be deleted by the user. As mentioned above a Format will revert a handset to a 'fresh out of the box' state.
