Can it be done ? I've just had the orange software removed & the latest generic software put on my N70, but I'd like to change the icons / shortcuts that go across the top of the main screen - Contacts - Profiles - Calendar - Gallery & Image Print ?
If I understand you correctly, you want to change the active standby applications, rather than the actual icons?
Go to Tools; Settings; Phone. Select Standby mode. Scroll down to Active standby apps and click on it. This will then give you the opportunity to select any application to be attached to each of the 5 shortcuts.

I'm still having a very bad echo problem with my N70 & I think it's bluetooth related - I've posted about this in another thread, but in an effort to cure the problem I had to pay my local nokia repair centre £10-00 to have the generic software installed instead of the orange software, and it still did not fix the problem
