Hi Holysoldier,
Sorry to hear about your issues you are having but there a few steps we can try to resolve this.
Firstly make sure you disable any firewall or anti virus that you have running temporarily and try initiating the update.
If it still keeps asking for a system reboot, then uninstall and reinstall the latest version of Nokia Suite and give it a try. Also make sure you have activated the automatic update via Tools > Options.
Also try switching the phone off and on. Then give the update a try.
If after this you still have the same issue do a soft reset on your phone. To do this dial *#7780# on your device. If the device ask's for a code then the default is 12345.
Give the above a try and let me know how you get on.

Hey Raoul...
I'm also finding trouble with installing the Belle update on my Nokia N8-00. I have tried all the possibilities that you listed, for the person that opened this topic, but without any result. I keep receiving errorcodes on my screen. Yes it sounds weird, but more than one code appears. Only I have one printscreen of one code, because it variates irregular between 2 different codes.
Here's the following info of my software that I have installed now:

Please HELP me! Because I really want this update and I think have tried it for almost 20 times already and I'm getting a bit mad because I'm already not very pleased by the phone, because since I've bought it I had quite some issues with it. Hope to hear from you soon!

The below is taken directly from the Nokia Belle FAQ:
While trying to update to Nokia Belle with Nokia Suite, I get an errorcode "12048" or an error message stating that the connection to the phone was lost. What should I do?
It is normal that the phone loses connection during the reboot phase. If you wait for a while it will automatically reconnect to your PC. If you lose connection during the backup, installation or restore phase, please do the following:
Note: If this doesn’t solve your issues, try to connect your phone to another USB port on your laptop or to a USB port on the backside of your desktop PC. In some cases rebooting the computer also helps or using another PC to do the update.
Also if the problems persists do you have another p.c you can try doing the update?
As a last resort you can make sure you uninstall the Nokia Suite. Reboot the device and reinstall the Nokia suite. Make sure you have nothing running in the backround no anti virus or firewall include Windows own firewall. Perform a hard reset on your device (Remembering to back up your contacts first using Nokia Suite!) To do a hard reset *#7370# with the default code of 12345.
