Is there a way to disable the "Connecting people" animation that plays everytime the phone is started ?

NO and YES, NO because you can't set it not to play in settings. YES, When it starts to play just press any key and it would be skipped.

And you can turn off startup tone, by going Profiles>options>personalize>warning tones >turn it off.
