who can help to teach me , If I  online purchased an nokia E63 in Nokia USA website, how to make it support chinese language?

 

I heard the E63 purchased in USA will has a USA-code, different from China -code.

how to achieve this?

the only way you can do it is by taking your phone to nokia care and asking them to install the specific language you want. it will cost you extra as it is not the standard language that came with your phone and therefore it is considered by nokia an extra service.

I heard that if I use my Nokia Software Updater to update, the Chinese language installed by Nokia Care will disappear? I'm wondering whether to update...

Yes, doing a firmware update erases the language pack installed by the care point, if you are not facing any major problem better stick to the current firmware.
